Our dairy products: a long-standing expertise in fermentation and nutrition

Dairy

Since 1919, Danone has been a pioneer in the development of fermented dairy products, building on a heritage that began with our first yogurt developed to support digestive health. More than a century later, our commitment to bringing health through food remains at the heart of everything we do. Dairy products are one of Danone's main contributions to a healthy and varied diet worldwide. A source of essential nutrients such as calcium, protein, vitamins and probiotics, our range of dairy products contributes to health and well-being at all stages of life.

Our expertise in fermentation, protein and biotics science means we can design products that offer both superior nutritional quality and a sensory experience favored by all. Thanks to these innovations, we provide our consumers with dairy products that not only taste good, but are also adapted to changing health needs.

The role of dairy products in supporting human health

Dairy products offer a unique combination of nutrients that play an essential role in human health. Yogurt and fermented dairy products, for example, are renowned for their high-quality proteins and bioavailable calcium, both of which are essential for bone health and muscle maintenance. In addition, dairy products are a source of important micronutrients such as vitamin B12, phosphorus, potassium and magnesium, which support metabolic function and overall vitality.

Scientific research conducted by Danone R&I experts has also confirmed the value of fermented dairy products in promoting intestinal health. Fermentation improves the bioavailability of nutrients and introduces beneficial bacteria (probiotics) that contribute to the balance of the intestinal microbiome. Regular consumption of fermented dairy products has been associated with improved digestion, support of the immune system and potential benefits for metabolic health.

New evidence also suggests that fermented dairy products, including yogurt, may play a role in maintaining a healthy weight and improving markers of metabolic health, such as blood glucose control. Indeed, diabetes is a growing global health crisis, demanding comprehensive and evidence-based strategies to combat its rise. To this end, in March 2024, the U.S. Food and Drug Administration (FDA) approved a qualified health claim regarding the consumption of yogurt and its association with a reduced risk of type 2 diabetes. Later that year, a group of experts reviewed this announcement and stated that incorporating nutrition expertise and food-based approaches, such as yogurt with its unique nutrient profile, is crucial in addressing Type 2 diabetes and related health challenges.

Scientific innovations that drive our dairy portfolio

Danone leverages leading-edge scientific advances to continuously enhance the nutritional quality and sustainability of its dairy products. Our areas of expertise include:

  • Biotics: at Danone Research & Innovation, we explore the role of pre-, pro- and postbiotics in improving gut health, immunity , and nutrient absorption. Our proprietary strains, such as Bifidobacterium breve and Lactobacillus rhamnosus, are carefully selected to deliver proven health benefits. These strains are part of our extensive collection at our Paris-Saclay R&I Center and form the basis for many of our dairy innovations.

  • Protein science: we design dairy products rich in high-quality protein to support overall health, immunity and gut comfort in the general population. Our teams study the digestibility and amino acid profiles of dairy proteins, ensuring they meet the needs of various life stages-from early childhood to healthy aging.

  • Fermentation technology: with more than 100 years of expertise, Danone continues to innovate in fermentation techniques. Our research allows us to fine-tune fermentation conditions to enhance flavor, texture, and nutritional content. We also explore how fermentation can reduce lactose content and increase the bioavailability of key nutrients.

  • Sensory research: consumer science is central to our innovation process. We conduct extensive sensory testing to understand preferences and perceptions of taste, texture, and appearance. This ensures our dairy products deliver an enjoyable eating experience while maintaining their health benefits.

Sharing microbial knowledge for the benefit of all

Danone’s commitment to health innovation extends beyond product development—it includes contributing to the scientific community through open collaboration. At the heart of our efforts is a unique microbial strain collection, built over more than a century of expertise in dairy fermentation. Housed at our Research & Innovation center in Paris-Saclay , this collection includes over 1,800 strains of lactic and bifidobacteria ferments, which we use in the development of yogurts and fermented milks across our global portfolio.

In a spirit of scientific openness, Danone has made part of this collection publicly accessible to support research in food, health, and environmental sustainability. Notably, 193 strains have been deposited at the National Collection of Cultures of Microorganisms, part of the Biological Resource Center of Institut Pasteur (CRBIP) in Paris. This initiative fosters cross-sector collaboration and enables researchers worldwide to advance microbial science with direct applications for nutrition, public health, and the future of sustainable food systems.

A commitment to sustainable dairy production

At Danone, we believe that providing nutritious dairy products goes hand in hand with protecting the planet. We are committed to responsible sourcing of raw materials, reducing our carbon footprint, and supporting regenerative agriculture. Our dairy products increasingly include options made with milk from farms that adopt animal welfare standards and practices that promote biodiversity.

We also invest in eco-friendly packaging and circular economy initiatives. For example, our efforts in reducing plastic usage and increasing recyclability contribute to our broader sustainability commitments, aligned with our "Entreprise à Mission" goals.

As we look to the future, Danone continues to push the boundaries of dairy science, bringing together tradition and innovation to offer healthier, more sustainable dairy products for people everywhere .
